Bread Recipe – CoCo Wheats Bread or Muffins – Basic Recipe

  • 3/4 cup CoCo Wheats
  • 3/4 cup milk
  • 1/2 cup oil
  • 1 cup brown sugar
  • 1 cup fruit or vegetable of choice*
  • 1 egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 1 tablespoon cocoa
  • 1-1/2 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 1/2 cup chopped nuts and/or 1/2 cup semisweet chocolate morsels.

*Fruit choices: -Mashed, ripe banana or unsweetened applesauce
*Vegetable choices: peeled, shredded zucchini or fresh-cooked or canned pumpkin.

  1. Preheat oven to 350°. Mix together in small bowl CoCo Wheats and milk; set aside for later. In large bowl mix together next 4 ingredients. Sift together the rest of the dry ingredients. Add flour mixture and CoCo Wheats mixture to first mixture. Blend well. Stir in nuts and/or chocolate morsels.
  2. Pour into greased 9-1/2″ x 5″ x 3″ bread loaf pan or muffin tins.
  3. Bake loaf about 1 hour; muffins 18 – 20 minutes (or until toothpick inserted in center of loaf or muffin comes out clean).
  4. Let sit for 5 – 10 minutes and remove from pan(s). Cool completely. May be frozen for later use.Makes 24 medium-size muffins.

TIP: For a smoother consistency, soak CoCo Wheats in cold water for 30-60 minutes. Drain. Add to Recipe.
